Objective :
A novel way to combine cooking and cultural curiosity with a 2 weeks holiday.
This is a specialised tour focusing on Kerala cuisine as the centrepoint
of the tour. (Here we are giving the itinerary. As it involved several
demonstrations the costing can be workedf out only on the basis of knowing
the number in the group.)
INTRODUCTION
Kerala has
been attracting people from the four corners of the globe for centuries
and even today continues to do so. All because she is the land of spices
. The ancient Romans ,Egyptians , Chinese, and later on the Dutch, Portuguese
and finally the English landed on her shores in search of Cinnamon , Cardamom
, Clove ,Nutmeg , Ginger and of course Pepper.
We are now taking
you on a voyage of discovery to this land of spices and show you how its
grown , harvested , processed , packed and finally sent to department
stores world wide. But even more interestingly, we are going to show you
with the help of expert chefs, from the Casino Group of Hotels , pioneers
in the Hotel Industry in Kerala are famous world wide for their food.
We will also invite experts to give you live demonstrations and lectures
on the aspects of cooking with spice with special emphasis on Kerala cuisine
and finally you will have hands on experience in the kitchens of various
Casino Group of Hotels.

DAY 1

Programme brief introduction on Kerala
(30 mts) cuisine, spices and spice plants
(30 mts ) distribution of Casinos cook book specially made for
gastronomic tours
( 1 hour ) Guided tour to spice villages spice plantations like Pepper,
Cardamom, Cloves ,Coffee , Tea , and the Medicinal plants numbering more
than 150.
( 1 hour ) Guided
tour to a Cardamom or pepper plantations.

DAY 2

Programme Display of 14 spices and explaining (30 mts ) its characteristics

Chef s demo and hands on by the participants.

Chef s styles of Kerala fusion cookery demonstrated with hands on
by the participants.
Kerala fry (shallow fry and stir fried)
Fish in tamarind and chillies .
(1 ½ hours ) Jumbo prawn curry (with coconut milk )
Barbeque with spices.

( ½ hour) Display and explanation of all the tropical vegetables
and fruits.
